Curried Sweet Potato Soup

Serves: 4


Sweet potatoes 300g

Onions chopped 1 nos

Garlic chopped 2 cloves

Knorr Seasoning Cube 1

Curry powder 1tbsp

Butter 2 tbsp

Water 1 1/2l

Thick coconut milk 2-3 tbsp

Salt & white pepper to taste

Flour 3tbsp

Spring onions 3tbsp


1. Put the chunks of potatoes in a blender and add a small amount of water. Process in a blender

2. Melt butter in a pan and onion and garlic. Saute till fragrant

3. Add flour and quickly stir and then add the sweet potato puree

4. Now add the seasoning cube

5. Add coconut milk and simmer for 1 min.

6. Add curry powder, salt and pepper

7. Add the rest of the amount of water and mix well

8. Sprinkle the spring onions.
