Glazed Marmalade Chicken with Sausage Stuffing

1 whole chicken

2 Knorr Seasoning Cubes

50g margarine

½ cup marmalade

1 tablespoon crushed pepper

1 teaspoon turmeric

1 tablespoon chili powder

1 tablespoon sugar

2 tablespoons soy sauce

300g sausage meat

1 cup pineapple chopped

50g cashew nuts chopped

1 onion, chopped

Celery, chopped

1 tablespoon mixed nuts


1. Melt margarine in a pan. Add crushed pepper, turmeric, chili powder, sugar, soy sauce, marmalade and the Knorr Seasoning Cube. Stir to mix well and take off heat.

2. In a small pan, melt a tablespoon of butter or margarine. Add the sausage meat, onion, celery, chopped cashew nuts, mixed nuts, chopped pineapple and sauté for a few minutes. Take off heat.

3. Prick the chicken with a fork and pour the Astra and Knorr Mixture on it, rub well and let it marinate in the chiller for 1 hour.

4. Stuff the chicken with the sausage meat mixture. Secure the opening with a toothpick.

5. Roast in an 1800 C preheated oven for 1 hour or until crisp.
